Asian Peanut Ramen

Serves 6

Ingredients:

-1 tbsp oil

-3 cloves of garlic, chopped

-1 teaspoon ginger, diced

-4 cups vegetable stock

-1 can coconut milk

-1/2 cup natural peanut butter ( I recommend pip&nut ‘s!)

-2 tbsp soy sauce

-2 tbsp agave/honey

-6 servings wholewheat noodles

-juice of a lemon

-any extra veggies,herbs,nuts for toppings of choice!

Method:

1.In a large pan heat the oil, onion, ginger and garlic till the onion and garlic is cooked. 2.Next add 3 cups veggie stock, bring to a boil and reduce to a simmer

3. mix the remaining broth and peanut butter in a bowl, then add to the mix. This makes it easier for the Pb to be introduced!

4. Add the soy, agave and lemon juice and simmer on low for 5-10 mins.

5. Add the noddles just before serving, these take about 5 mins to cook! You can also add any veggies you like now too, I added sliced mushrooms.

6. Devour! Serve with parsley and nuts!
