Chili SIN Carne


Recipe (serves 4): -2 large sweet potatoes, cut into chunks -1 onion, diced - 2 carrots, chopped - 2 celery, chopped -2 400g cans chopped tomatoes -1 400g can red kidney beans -1 400g can black beans - 2 tbsp oil of choice (i used olive oil) -2 tsp paprika -2 tsp cumin -2 garlic cloves, minced -1 tsp chilli powder (or 2 if you're not afraid of spice) -1 tsp oregano -1 tbsp tomato puree -1 red pepper, chopped

METHOD: 1) place the sweet p's on the tray, add the oil, paprika, and cumin. Roast for 25 mins at 200C. 2)Turn hob on medium and put another tbsp oil in, along with the onion, carrot, celery and then garlic. cook for 8 mins or so before adding 1 tbsp tomato puree and the oregano. 3)add chopped toms, red pepper, 1 cup of water. Bring to a boil then reduce to a simmer for 20 mins before adding the beans and cooking for another 10. 4) once the sweet p's are reading take them out the often as to not over cook! keep on the side till the beans have been cooking for 10 then stir them in and cook for another minute. SERVE! garnish with coriander.
