Creamy Mushroom Fusili

Did someone say pasta?😏 Light & Creamy Mushroom Fusili (3)

* 230g wholewheat fusili DRY

* 225g mushrooms, sliced in half

* 2 courgettes, diced 4 ways

* 3 cloves of garlic, minced

* 1 white onion, diced

* 1 tbsp oil for sautéing * 2 tbsp brown rice miso paste

* 1 1/2 cup plant milk (I used oat- my new fav)

* 1 cup water

* 1 veggie stock cube

* 3 tbsp tahini

* 1/4 cup nutritional yeast

* Half a lemon squeezed

* 1/2 tsp black pepper

METHOD:

1. Sauté onion and oil in a pan for 5 mins.

2. Add garlic, courgette and mushrooms.

3. Add the DRY PASTA (emphasis), water and plant milk and let this simmer for 10.

4. Add the rest of the ingredients, make sure the pasta’s cooked through and serve!
