Creamy Pumpkin Soup

Recipe serves 4-6 Ingrédients: -2 cans pumpkin purée -1 onion diced -1 tbsp coconut oil -2 cloves garlic -1 tsp ginger -1 tsp thyme -2 tbsp maple syrup -1 can coconut milk -1 1/2 cup veggie stock -Salt and pepper to taste Method: 1)Sauté oil, onion, ginger and garlic in a pot till onion starts to go translucent, then add thyme and sauté further till onions go soft. 2)add coconut milk, veggie stock and pumpkin purée and cook for 3-5 mins. Using an émersion blender, blend for 5-7 minutes till smooth. 3)Season with salt, pepper and serve with pumpkin seeds!
