EASY VEGAN SCONES!

Embracing my English half with these EASY VEGAN SCONES- no one would ever guess they’re vegan! Topped with plenty of jam and dairy free cream ofcourse 🤤

* 3 cups flour

* 6 tsp baking soda

* 1/2 tsp salt

* 1/2 cup margarine

* 4 tbsp caster sugar

* 3/4 cup plant milk (I used oat)

* 1 tsp vanilla extract

* Half a lemon moderately squeezed (just don’t totally dry the thing out)

method:

1. Preheat oven to 220*C

2. Stir flour, salt, baking soda and butter in a bowl with your hands till the mix becomes crumbly

3. Add the rest of the ingredients and use a spoon to mix thoroughly

4. Flour a surface and start making small fist size balls (aka my fist size... I have tiny hands) with the dough and placing them on the surface and rolling them around in a bit of flour. This recipe makes about 9 balls.

5. Line a baking tray with a baking liner, and place each ball on the tray and lightly flatten with your hand so it makes a scone shape.

6. Using a brush, lightly pain the top of the scones with some more milk.

7. Bake for 15-20 mins! (I baked mine for 17) - depends how brown you like them!

8. Devour.
