Healing Kitchari


INGRÉDIENTS: (4) -1 tbsp oil -1/2 white onion -3 cloves of garlic -2 tbsp fennel seeds -2 tsp brown mustard seeds, fennel, fenugreek, ginger -2 1/2 tsp cumin -1 tsp coriander, salt and pepper -2 cups split red lentils -1 cup brown rice -4 cups veggie broth -5 cups water -2 bay leaves -chopped veggies of choice (I usually cheat here and buy 2 packs of mixed vegetables from the supermarket!) METHOD: 1. heat the oil and all the spices in a pot on medium heat till the spices start to smell very strongly. 2. Next add the onion and garlic and cook for another 2-3 mins. 3. Add the dry ingredients, stir to make sure the spices have coated it all, then add the wet ingredients. 4. Bring to a boil, then let it simmer for an hour! Make sure the bay leaves are placed on top to be able to take them out before serving!
