Healthy Mac n Cheese

Serves 2

Ingredients:

- 40g soaked cashews

- 1/4 cup veggie broth

- 1 small peeled and chopped carrot

- 1 white potato (100g ish), chopped

- 1/4 can coconut milk

- 1/2 onion

- 1 tbsp flour

- 1/2 tbsp lemon juice

- salt and pepper to taste

- 150 g pasta


Method:

1) Pre soak the cashews in boiling water, preferably overnight but 15-20 mins beforehand works fine.

2) While doing this, put the potato and carrot in a pot with salted boiling water, cook on medium heat for 10-15 mins till soft.

3) Boil your pasta of choice (whole wheat is my favourite! Gives a nuttier taste)

4) Add all other ingredients, including the softened potato and carrot, to a blender and blitz till thick and creamy! Pour over pasta and serve!
