Mediterranean Grilled Vegetables


Growing up in Barcelona, grilled vegetables were a staple go-to for me on the menu! No wonder other than the whole food, plant based diet the mediterranean diet is the second healthiest! Mediterranean cuisine has so many accidentally vegan dishes, this being one of them!


Serves 2 (as a side, if all you're having is veggies then definitely eat the whole dish!)


Ingredients:

- 3 aubergines

- 3 courgettes

- 3 red bell peppers

- 450g button mushrooms

- 8 pardon peppers

- about 4 tbsp olive oil

- sea salt


Method:

1) Wash and dry veggies, cut and slice them as you like so that all pieces will be similar sizes.

2) Prepare 1-2 baking sheets by lining them with foil and greasing them with 2 tbsp olive oil. Lay the veggies on top, separating them, and using your hands/a brush coat with another 2 tbsp oil. Sprinkle with sea salt.

3) Cook in oven at 180/200*C for about 30 mins- keep checking as this will differ depending on size/thickness of veggies!
