Ingredients (4):
-1 tbsp oil of choice
-3 cloves of garlic,minced
-8 tbsp natural peanut butter (I use @pipandnut)
-1 onion, diced
-1 tsp paprika
-1/2 tsp cayenne pepper
-1/4 tsp chilli flakes
-2 tbsp tomato paste
-2 cans chickpeas, drained and rinsed
-200 ml veggie stock
-1 can coconut milk
-handful of spinach/kale
Method:
1)Sauté onion and ginger in oil on a pan over medium heat till onion turns translucent, add all the spices and tomato paste and stir to coat.
2)Add coconut milk, chickpeas and veggie stock and cook on medium heat for 5-7 mins while stirring.
4)Add in the spinach/kale and cook for another minute, allowing it to wilt, then serve!
