Quick and Easy Lentil Bolognese

Serves 2

Ingredients:

- 1/2 yellow onion, chopped

- 1/2 cup red lentils

- 1 400ml can chopped tomatoes

- 1 cup water

- 1/2 tsp dried oregano

- 1 tbsp dried basil

- 1/2 tbsp lemon juice

- 1 tbsp tamari sauce

- 1 clove of garlic, diced


Method:

1) Cook onion and garlic in a pan with some oil of choice till the onion starts to cook

2) Add all other ingredients and let it simmer for 15 mins, during this time cook your pasta of choice for 2. I use whole wheat pasta whenever I can, I find it gives a nuttier flavour that goes well with any sauce.

3) Serve! Add basil and nutritional yeast for extra flavour.
