This overnight oat recipe is perfect for the start of autumn; warm, comforting and full of nutrients to repel any colds! The stewed Apple takes about 30 minutes to make so I recommend using 4 apples to make enough for a couple batches!
Stewed Apple:
-2 red apples (gala are my favourite!) peeled and chopped into equal chunks
-1 tsp brown sugar
-1/2 lemon juice
Method: Popped in a pan with 1/8 cup of water (or just enough to cover the bottom of the pan) and cooked at low/medium for 20 mins with the lid on. Once apples have softened simply mash with a fork! Voila!
Choats:
- 1/2 cup oats
- 1 stewed apple
- 2 tbsp chia seeds
- 1 cup plant milk
- generous handful raisins
- 1/4 tsp cinnamon
- 1 tbsp maple syrup
Method:
Put all in a mason jar and refrigerate overnight! Add extra apple on top in the morning and heat in the microwave for 3 minutes!
