Super Creamy Alfredo


This one. Is a winner. Out of all of my recipes for vegan newbies/ skeptics to try this is probably my number 1 recommendation! This sauce is so creamy and hearty, perfect for anyone missing the classic non-vegan version.


Serves 4


Ingredients:

- 1 white onion, diced

- 2 cups veggie stock

- 4 minced garlic cloves

- 75g soaked cashews (at least 15 mins but for creamiest results overnight)

- 3 tbsp nutritional yeast

- 1/2 tsp salt

- 1/2 tsp pepper

- 300g spag/pasta of choice (you all know I recommend whole wheat!)


Method:

1) Add the onion and only 1 cup of veggie stock to a large pan, cook for 8-10 mins till the onion is tender. Add the garlic and stir for another min, the broth should all be gone by now, if not turn up the heat till it is.

2) Add onion and garlic to a blender along with another 1/2 cup of veggie stock, only 1 tbsp of nutritional yeast to start with and the cashews/salt/pepper. Blend till smooth, then add remaining stock and yeast, blitz again! Serve!
