I love lentils, love 'em. They were the first solid food I ever ate and have always remained a life long favourite of mine. Full of fibre, protein and iron what's not to love?! 2 year old me didn't know this though- I just loved the taste! Lentils are so versatile and can be cooked in so many different ways, combining them with sweet potato and spinach creates such a hearty, comforting meal! I served mine with black rice, which is loaded with anti oxidants, but any rice/ bread will do!
Serves 4
Ingredients:
- 1 tbsp oil
- 80g bag of spinach
- 600ml veggie stock
- 250g red split lentils
- 2 medium sweet potatoes cut into chunks
- 1 1/2 tsp ground cumin
- 1 1/2 tsp ground turmeric
- 1 thumb sized piece of ginger, minced
- 1 clove of garlic, minced
- 1 red onion finely chopped
Method:
1) Heat the onion and oil in a pan on low heat for 10 mins with the lid on, stirring often.
2) Add ginger and garlic, cook for 1 min, then add the spices and cook for a further minute.
3) Turn the heat up slightly and add the sweet p chunks, stirring them around to coat them in the spices. Next add the lentils, veggie stock and a sprinkle of salt and pepper.
4) Bring the mixture to a boil then reduce to a simmer, place the lid on top and cook for 20 mins
5) At the last moment add the spinach so it wilts, then serve!
