Sweet Potato and Spinach Lentil Dahl


Ingredients (4): - 1 tbsp oil - 80g spinach - 600ml veggie stock - 250g red split lentils - 2 medium sweet potatoes cut into chunks - 1 1/2 tsp ground cumin - 1 1/2 tsp ground turmeric - 1 thumb sized piece of ginger, minced - 1 clove of garlic, minced - 1 red onion finely chopped Method: 1) Heat the onion and oil in a pan on low heat for 10 mins with the lid on, stirring often. 2) Add ginger and garlic, cook for 1 min, then add the spices and cook for a further minute. 3) Turn the heat up slightly and add the sweet p chunks, stirring them around to coat them in the spices. Next add the lentils, veggie stock and a sprinkle of salt and pepper. 4) Bring the mixture to a boil then reduce to a simmer, place the lid on top and cook for 20 mins. Add the spinach into the mix right before serving as it should only take a minute to wilt!
