Sweet & Spicy Chickpea Lentil Dahl


Recipe (serves 4) -1 tbsp oil -1/4 onion or 1 shallot -3 cloves of garlic -4 tbsp green curry paste -1 can coconut milk -1 cup water -1 tsp curry powder -1 tsp turmeric -1/2 tsp salt and pep each -2 tbsp sugar (I used date sugar) or maple syrup -1 cup green lentils -1 can chickpeas (400g)

Method:  1) saute onion and garlic for a few minutes, before adding the curry paste and sautéing for another 2-3 mins.  2) add coconut milk, turmeric, curry powder, salt and pep + stir.  3)bring to a boil then reduce to a simmer, then add the lentils, sugar and water.  4) allow the mixture to simmer for 10 mins, stirring occasionally, before adding the chickpeas and cooking for another 10-15 mins or until the lentils are tender. serve!
