Thick Spicy Japanese Style Tofu Curry

I absolutely love curries, this blend of Japanese and Indian spices works really well against the smoother taste of the pressed tofu. I always serve mine with brown rice (pictured) but feel free to use whatever rice/bread you like! (4)
Ingredients:
- 1 large onion, chopped
- 5 cloves of garlic, diced
- 2 inch piece of ginger, peeled and chopped
- 2 large carrots, peeled and chopped
- 1/2 green apple, core removed and chopped
- 1 tbsp white miso
- 1 1/2 cups boiling water
- 4 tbsp curry powder
- 1 tbsp garam masala
- 2 tsp rice vinegar
- 4 tsp tamari/soy sauce
- 2 tsp maple syrup
Method:
1) Melt some coconut/olive oil in a large saucepan- add the onion, ginger and garlic over medium heat and cook till the onion is translucent.
2) Add the spices and cook for a few minutes till they smell strengthens, then add in the carrot ad apple and stir
3) Dilute the miso in the hot water and add to the pan, bring to a boil and simmer for 20 minutes.
4) Blend mixture until smooth, add the rice vinegar/ tamari and maple syrup. Blitz some more.
5) cook tofu in pan on medium heat, then add sauce to pan and cook for 1 minute. Serve!
